I understand Guild Wars 2 should be anything you want, but I'd like to achieve high numbers - I'd like to get high mastery points, achievement points, and complete ascended/legendary armor fastest way possible. But I'm not sure what to prioritize first. For instance, I'm not sure if it's better to grind for Griffon first and then ascended armor.

Around 8k hours, 193 mastery. Using other players playtime probably isn't a good metric. I have a shameful amount of hours in this game, but to reach maximum isn't overly difficult. However, you would need to do at least 1 raid boss. Crafting your first legendary is more about how much dedication you have as a player.
There are at least 80 mastery points already available, far greater than the 52 to fully max the four masteries. There are 38 PoF Mastery Insights, i.e. available directly on the map. (Some easy-to-reach communing, a few like the one to which the OP objects.)
In fact, there are many more points to be found than what you actually need. Even the raid mastery track can be finished without collecting any of the points related to raiding. The caveat is that you have to complete at least one encounter to unlock the track in your mastery tab. #3.
